Higher Yields, Better Food Quality

This cook and hold oven uses Halo Heat® technology to provide better food quality and higher yields. Instead of using high heat elements, humidity, or fans, radiant heat is utilized for a gentler cook that evenly surrounds the food. Maintain precise temperatures throughout the cooking and holding process for high-quality results every time. This unit has a temperature range of 200 to 325 degrees Fahrenheit and a hold temperature range of 85 to 205 degrees Fahrenheit.

Easy to Operate

Reduce labor and operating costs and free up your kitchen to reclaim 12 to 16 hours of nonproductive time with overnight cooking and holding. Roast, proof, braise, reheat, ferment, sous-vide, and hold more in the same cabinet to provide a better distribution of workloads and relieve other pieces of equipment. For added convenience, a removable food probe senses the internal product temperature and automatically shifts the unit to hold mode once the cook time parameters have been reached.

Place Anywhere

With a ventless and waterless design, you can place the cook and hold oven anywhere. No traditional oven hood or outside venting is required, so you can save on hood installation and operating costs. A waterless design further reduces installation and operating costs with no plumbing, drains, filtration, or associated maintenance.

Convenient Capacity

This unit has a total capacity of 100 lb. and features a set of 3 wire shelves that can accommodate up to 10 full size (12″ x 20″) food pans or 20 half size (12″ x 10″) food pans. A set of 2 stainless steel racks are also included, adjusting between 10 interior pan positions to allow for a wide variety of configurations.

Simple Cleaning

For easy cleaning, a removable drip tray and a drip pan with a drain are mounted to the unit’s front exterior, while a set of (4) 3 1/2″ casters allow for mobility while cleaning. 2 casters are rigid, while the other 2 swivel and feature brakes for stationary use. This unit requires a 120V electrical connection.
